How To Make Turkey & Coriander Burgers with Guacamole

Ingredients

  • 1 lb ground turkey
  • 1/4 cup fresh coriander, chopped
  • 1/2 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 avocado
  • 1 small tomato, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh coriander, chopped
  • Juice of 1 lime
  • Salt to taste
  • 4 burger buns
  • Lettuce and sliced tomato for topping

Instructions

  1. In a large bowl, mix together ground turkey, chopped coriander, red onion, garlic, cumin, paprika, salt, and black pepper. Shape into 4 patties.

  2. Preheat grill or grill pan over medium heat. Cook the burgers for about 6-7 minutes per side until cooked through.

  3. While the burgers are cooking, make the guacamole. In a bowl, mash the avocado with a fork. Stir in diced tomato, red onion, chopped coriander, lime juice, and salt.

  4. Toast the burger buns on the grill for a few minutes until lightly charred.

  5. Assemble the burgers by placing a patty on the bottom bun. Top with lettuce, sliced tomato, and a generous dollop of guacamole. Cover with the top bun.

  6. Serve the turkey and coriander burgers with the remaining guacamole on the side.
