How To Make Fabada

Ingredients

  • 2 cups dried white beans
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 1/2 lb pork shoulder, cubed
  • 6 oz chorizo sausage, sliced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Soak the dried white beans overnight in plenty of water. Drain and rinse before using.

  2. In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.

  3. Add the pork shoulder and chorizo sausage to the pot, and cook until browned on all sides.

  4. Stir in the smoked paprika and ground cumin, and cook for an additional minute to release the flavors.

  5. Add the soaked and drained white beans, bay leaves, and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for about 2 hours or until the beans are tender and the stew has thickened.

  6. Season with salt and pepper to taste.

  7. Serve the fabada hot, garnished with fresh parsley.
