Ingredients
- 2 racks of lamb (around 2 lbs total)
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 425°F (220°C).

Season the racks of lamb with salt, pepper, dried rosemary, and dried thyme.

Heat olive oil in an oven-proof skillet over medium-high heat.

Sear the racks of lamb on all sides until nicely browned.

Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the lamb reaches your desired level of doneness.
