Ingredients

  • 2 racks of lamb (around 2 lbs total)
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Season the racks of lamb with salt, pepper, dried rosemary, and dried thyme.

  3. Heat olive oil in an oven-proof skillet over medium-high heat.

  4. Sear the racks of lamb on all sides until nicely browned.

  5. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the lamb reaches your desired level of doneness.

  6. Remove from the oven and let the lamb rest for 5 minutes before slicing.
