How To Make Israeli Matzo Ball Soup

Comforting chicken soup with fluffy matzo balls, a classic Jewish dish.

Serves:

Ingredients

  • 1 whole chicken, cut into pieces
  • 10 cups of water
  • 1 large onion, chopped
  • 4 stalks of celery, chopped
  • 4 carrots, peeled and chopped
  • 2 cloves of garlic, minced
  • 2 tsp of salt
  • 1/4 tsp of black pepper
  • 1 cup of matzo meal
  • 4 eggs
  • 1/3 cup of vegetable oil

Instructions

  1. In a large pot, add chicken, water, onion, celery, carrots, garlic, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 1 1/2 to 2 hours, until chicken is cooked and tender.

  2. While soup is simmering, make the matzo balls. In a bowl, mix matzo meal, eggs, vegetable oil, and salt. Cover and refrigerate for at least 30 minutes.

  3. With wet hands, form matzo mixture into 1-inch balls.

  4. About 20 minutes before serving, add matzo balls to soup and let cook for 15-20 minutes until they are cooked through.

  5. Ladle soup and matzo balls into bowls and enjoy!
