How To Make Instant Pot Lentil Soup Recipe

A hearty, healthy soup made with lentils, veggies, and spices that’s perfect for chilly evenings.

Preparation: 10 minutes
Cooking: 20 minutes
Total: 30 minutes

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup uncooked red lentils, rinsed and drained
  • 4 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish (optional)

Instructions

  1. Press the Sauté button on your Instant Pot and add olive oil. When hot, add onion, garlic, carrots, and celery and stir until softened, about 5 minutes.

  2. Add lentils, vegetable broth, cumin, smoked paprika, salt, and black pepper. Stir to combine.

  3. Close the lid of the Instant Pot and make sure the valve is set to sealing. Press the Manual/Pressure Cook button and set the cooking time to 10 minutes on high pressure.

  4. When the cooking time is up, let the pressure release naturally for 10 minutes, then do a quick release to release any remaining pressure.

  5. Carefully open the lid and stir the soup. Serve hot, optionally garnished with chopped cilantro.
