How To Make Instant Pot Lentil Soup Recipe
A hearty, healthy soup made with lentils, veggies, and spices that’s perfect for chilly evenings.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 1 cup uncooked red lentils, rinsed and drained
- 4 cups low-sodium vegetable broth
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- Fresh cilantro, chopped, for garnish (optional)
Instructions
-
Press the Sauté button on your Instant Pot and add olive oil. When hot, add onion, garlic, carrots, and celery and stir until softened, about 5 minutes.
-
Add lentils, vegetable broth, cumin, smoked paprika, salt, and black pepper. Stir to combine.
-
Close the lid of the Instant Pot and make sure the valve is set to sealing. Press the Manual/Pressure Cook button and set the cooking time to 10 minutes on high pressure.
-
When the cooking time is up, let the pressure release naturally for 10 minutes, then do a quick release to release any remaining pressure.
-
Carefully open the lid and stir the soup. Serve hot, optionally garnished with chopped cilantro.
