  • Chopped fresh parsley, for garnish

Instructions

  1. In a large pot, add the chicken, leeks, chicken broth, bay leaves, and dried thyme. Season with salt and pepper to taste.

  2. Bring the mixture to a boil, then reduce heat and simmer for about 1 hour, or until the chicken is cooked through and tender.

  3. Remove the chicken from the pot and let it cool slightly. Remove the meat from the bones and shred into bite-sized pieces. Discard the bones and return the chicken to the pot.

  4. Simmer the soup for an additional 30 minutes to allow the flavors to blend together.

  5. Serve hot, garnished with chopped parsley. Add cooked rice, if desired.
