Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 cup lentils, rinsed and drained
  • 2 cups chicken broth
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp turmeric powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.

  2. Season chicken breasts with cumin, paprika, turmeric, salt, and pepper. Add chicken to the pot and cook until browned on both sides.

  3. Add lentils and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for about 30 minutes or until lentils are tender and chicken is cooked through.

  4. Remove chicken from the pot and shred it using two forks. Return shredded chicken to the pot and stir to combine. Cook for an additional 5 minutes to allow flavors to meld together.

  5. Serve hot, garnished with fresh parsley.
