How To Make Chicken with Mustard Lentils

Ingredients
- 4 chicken breasts
- 1 cup lentils
- 2 cups chicken broth
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- Olive oil for cooking
Instructions

Season the chicken breasts with salt and pepper on both sides.

Heat olive oil in a pan over medium-high heat. Cook the chicken breasts until they are golden brown and cooked through, about 6-8 minutes per side. Remove from pan and set aside.

In the same pan, add minced garlic and cook until fragrant, about 1 minute.

Add lentils, chicken broth, Dijon mustard, and thyme to the pan. Stir well to combine.

Reduce heat to low, cover, and simmer for 20-25 minutes or until the lentils are tender.

Place the cooked chicken breasts back into the pan with the lentils. Cook for an additional 5 minutes to allow the flavors to meld together.

Serve the chicken with mustard lentils hot, garnished with fresh thyme if desired.
