Serves:

Ingredients

  • 4 chicken breasts
  • 1 cup lentils
  • 2 cups chicken broth
  • 2 tablespoons Dijon mustard

  3. In the same pan, add minced garlic and cook until fragrant, about 1 minute.

  4. Add lentils, chicken broth, Dijon mustard, and thyme to the pan. Stir well to combine.

  5. Reduce heat to low, cover, and simmer for 20-25 minutes or until the lentils are tender.

  7. Serve the chicken with mustard lentils hot, garnished with fresh thyme if desired.
