  • 1 whole chicken, cut into pieces
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 zucchini, sliced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of ground cumin
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, add the chicken pieces, onion, garlic, oregano, cumin, salt, and pepper.

  2. Cover with water and bring to a boil. Reduce heat and let it simmer for 30 minutes.

  3. Skim off any foam that rises to the surface.

  4. Add the carrots, potatoes, and zucchini to the pot. Cook for another 20-30 minutes until the vegetables are tender and the chicken is cooked through.

  5. Taste and adjust the seasoning if needed.

  6. Remove the chicken pieces from the pot, shred the meat, and discard the bones. Return the shredded chicken to the pot.

  7. Serve hot with fresh cilantro and lime wedges on the side.
