  • 1 lb chicken, cut into pieces
  • 1 cup jasmine rice
  • 5 cups chicken broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons cooking oil
  • Salt and pepper to taste
  • Optional toppings: hard-boiled eggs, spring onions, fried garlic, calamansi or lemon wedges

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.

  2. Add the chicken and cook until browned on all sides.

  3. Add the rice and cook, stirring constantly, for about 5 minutes or until lightly toasted.

  4. Pour in the chicken broth and bring to a boil. Reduce heat to low and let it simmer for about 30-40 minutes or until the rice is fully cooked and the chicken is tender.

  5. Stir in the fish sauce and soy sauce. Season with salt and pepper to taste.

  6. Serve hot with your preferred toppings like hard-boiled eggs, spring onions, fried garlic, and calamansi or lemon wedges.
