Ingredients

  • 1 cup uncooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 bell peppers, diced
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups vegetable broth
  • 1 lime, juiced
  • Fresh cilantro, for garnish

Instructions

  1. Rinse quinoa and add to slow cooker.

  2. Add black beans, corn, bell peppers, red onion, garlic, chili powder, cumin, paprika, salt, and black pepper.

  3. Pour in vegetable broth and lime juice.

  4. Stir well and cover slow cooker.

  5. Cook on low for 4 hours.

  6. Serve hot, garnished with fresh cilantro.
