Serves:

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tbsp cornstarch
  • 1/4 cup water
  • Cooked rice, for serving
  • Sliced green onions and sesame seeds, for garnish

Instructions

  1. Place chicken breasts in the slow cooker.

  2. In a separate bowl, mix together pineapple chunks, pineapple juice, soy sauce, honey, garlic, and ginger. Pour over the chicken.

  3. Cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and tender.

  4. In a small bowl, whisk together cornstarch and water. Stir into the slow cooker and cook for an additional 30 minutes, until the sauce has thickened.

  5. Serve the chicken over cooked rice. Garnish with sliced green onions and sesame seeds.
