Ingredients

  • 1 cup dried pinto beans, soaked overnight
  • 4 slices bacon, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. In a slow cooker, combine soaked pinto beans, bacon, onion, garlic, jalapeno, cumin, and chili powder.

  2. Pour in the chicken broth and season with salt and pepper.

  3. Cover and cook on low heat for 8 hours or until the beans are tender.

  4. Serve hot, garnished with fresh cilantro.
