How To Make Seared Scallops with Flavoured Greens

Ingredients
- 16 large scallops
- 2 tsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups mixed greens (spinach, arugula, or lettuce)
- 2 cloves of garlic, minced
- 1 tsp red pepper flakes
- 2 tbsp lemon juice
- 1 tbsp butter
- Lemon wedges, for serving
Instructions

Pat the scallops dry with paper towels and season with salt and black pepper.

Heat the olive oil in a large skillet over high heat. Add the scallops to the skillet and sear for 2-3 minutes on each side, until golden brown and cooked through. Remove the scallops from the skillet and set aside.

In the same skillet, add the garlic and red pepper flakes. Cook for 1 minute, until fragrant.

Add the mixed greens to the skillet and toss until wilted, about 2-3 minutes.

Remove the skillet from the heat and drizzle the greens with lemon juice. Stir in the butter until melted.

Divide the greens among 4 plates and top with the seared scallops. Serve with lemon wedges on the side.
