How To Make Seafood Enchiladas

Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb white fish fillets, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 cup corn kernels
- 1 cup black beans, drained and rinsed
- 1 cup enchilada sauce
- 8 flour tortillas
- 1 cup shredded cheese (such as Monterey Jack or Cheddar)
- 1 avocado, sliced
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat some oil over medium heat. Add the onion and garlic and cook until softened.

Add the shrimp and white fish to the skillet and cook until they are cooked through, about 5 minutes.

Stir in the red bell pepper, corn, black beans, and enchilada sauce. Cook for another 2 minutes, until heated through.

Place about 1/4 cup of the seafood mixture onto each tortilla. Roll them up tightly and place them seam side down in a baking dish.

Sprinkle the shredded cheese on top of the enchiladas.

Bake in the preheated oven for about 15-20 minutes, until the cheese is melted and bubbly.

Serve the seafood enchiladas with sliced avocado and garnish with fresh cilantro.
