Ingredients

  • 4 halibut fillets
  • 2 cups heritage tomatoes, sliced
  • 1 lemon, juiced
  • 2 sprigs fresh dill
  • 1 bay leaf
  • 4 cups water
  • 1 tbsp white vinegar
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a large pot, bring water, vinegar, lemon juice, dill, bay leaf, salt, and pepper to a boil.

  2. Reduce heat to a simmer and carefully place the halibut fillets in the pot. Cook for 8-10 minutes, or until the fish is opaque and cooked through.

  3. Remove the halibut fillets and set aside.

  4. Arrange the sliced heritage tomatoes on a serving platter.

  5. Place the poached halibut fillets on top of the tomatoes.

  6. Drizzle with olive oil, season with salt, and garnish with fresh dill.

  7. Serve immediately and enjoy!
