How To Make Poached Halibut with Heritage Tomatoes

Ingredients
- 4 halibut fillets
- 2 cups heritage tomatoes, sliced
- 1 lemon, juiced
- 2 sprigs fresh dill
- 1 bay leaf
- 4 cups water
- 1 tbsp white vinegar
- Salt, to taste
- Black pepper, to taste
Instructions

In a large pot, bring water, vinegar, lemon juice, dill, bay leaf, salt, and pepper to a boil.

Reduce heat to a simmer and carefully place the halibut fillets in the pot. Cook for 8-10 minutes, or until the fish is opaque and cooked through.

Remove the halibut fillets and set aside.

Arrange the sliced heritage tomatoes on a serving platter.

Place the poached halibut fillets on top of the tomatoes.

Drizzle with olive oil, season with salt, and garnish with fresh dill.
