Ingredients

  • 4 fresh herrings, deboned and filleted
  • 4 slices of pancetta
  • 2 tablespoons Dijon mustard
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Fresh dill, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Lay the herrings flat on a cutting board. Spread a thin layer of Dijon mustard on each fillet.

  3. Season with salt and pepper. Roll up each fillet tightly starting from one end.

  4. Wrap each rolled herring with a slice of pancetta and secure with a toothpick.

  5. Heat olive oil in a large skillet over medium heat. Add the rolled herrings and cook until pancetta is crispy and herrings are cooked through, about 5 minutes per side.

  6. Transfer the herrings to a baking dish and bake in the preheated oven for an additional 5 minutes.

  7. Remove from the oven and let cool slightly. Garnish with fresh dill before serving.
