Serves:
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers
- 2 tbsp unsalted butter
- 2 tbsp chopped fresh parsley
Instructions
-
Place the chicken breasts between plastic wrap and pound to an even thickness.
-
In a shallow dish, mix together the flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off any excess.
-
Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on each side, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
-
Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
-
Pour in the chicken broth and lemon juice, scraping the bottom of the skillet to deglaze.
-
Bring the mixture to a simmer and cook for 2-3 minutes until slightly reduced.
-
Stir in the capers and butter until the butter is melted and the sauce is smooth.
-
Return the chicken breasts to the skillet and cook for an additional 2-3 minutes until cooked through.
-
Sprinkle with chopped fresh parsley before serving.
