Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers
  • 2 tbsp unsalted butter
  • 2 tbsp chopped fresh parsley

Instructions

  1. Place the chicken breasts between plastic wrap and pound to an even thickness.

  2. In a shallow dish, mix together the flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off any excess.

  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on each side, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.

  4. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.

  5. Pour in the chicken broth and lemon juice, scraping the bottom of the skillet to deglaze.

  6. Bring the mixture to a simmer and cook for 2-3 minutes until slightly reduced.

  7. Stir in the capers and butter until the butter is melted and the sauce is smooth.

  8. Return the chicken breasts to the skillet and cook for an additional 2-3 minutes until cooked through.

  9. Sprinkle with chopped fresh parsley before serving.
