Ingredients

  • 4 baguettes
  • 200g prawns
  • 100g beansprouts
  • 4 eggs
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • Fresh coriander leaves, for garnish

Instructions

  1. Slice the baguettes in half, lengthwise. Remove some of the bread in the center to create a hollow.

  2. In a bowl, whisk the eggs with salt and pepper.

  3. Heat vegetable oil in a large frying pan over medium heat. Add prawns and cook until pink, then add beansprouts and cook for another 2 minutes.

  4. Pour the whisked eggs over the prawns and beansprouts. Cook for a few minutes until the omelette is set.

  5. Transfer the omelette onto one half of each baguette. Drizzle with soy sauce and sesame oil.

  6. Garnish with fresh coriander leaves.

  7. Serve immediately.
