How To Make Eggplant Sandwiches

Ingredients
- 1 large eggplant, sliced into 1/2 inch rounds
- 2 tbsp olive oil
- Salt and pepper, to taste
- 4 slices of bread
- 4 tbsp mayonnaise
- 1 cup arugula
- 1 tomato, sliced
- 1/2 red onion, thinly sliced
- 4 slices of mozzarella cheese
Instructions

Preheat the grill or grill pan over medium heat.

Brush the eggplant slices with olive oil and sprinkle with salt and pepper.

Grill the eggplant slices for about 4 minutes per side, until tender and grill marks appear.

Toast the bread slices and spread mayonnaise on each slice.

Place a grilled eggplant slice on the bottom half of each bread slice.
