Ingredients

  • 1 cup pearl barley
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 1 cup frozen peas
  • 1 can diced tomatoes (14 oz)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the pearl barley in vegetable broth according to package instructions. Set aside.

  2. Heat some oil in the same pot and sauté the onion and garlic until fragrant.

  3. Add the carrots, celery, frozen peas, diced tomatoes, thyme, oregano, and red pepper flakes. Cook for 5 minutes.

  4. Pour in the cooked pearl barley and vegetable broth. Stir well and bring to a simmer.

  5. Cook for another 20-30 minutes, or until the vegetables are tender and the stew has thickened.

  6. Season with salt and pepper to taste.

  7. Serve the stew hot, topped with crumbled feta cheese and fresh parsley for garnish.
