Ingredients

  • 1 lb steak (ribeye or sirloin)
  • 2 lemons, sliced
  • 4 cups mixed salad greens
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 cup croutons
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh parsley leaves
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper, to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat. Season the steak with salt and pepper.

  2. Grill the steak for 4-5 minutes per side, or until desired doneness. Remove from heat and let it rest for 5 minutes. Slice the steak into thin strips.

  3. Preheat the oven to 400°F (200°C). Place the lemon slices on a baking sheet lined with parchment paper and roast for 10-12 minutes, or until slightly caramelized.

  4. In a large mixing bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, croutons, basil, and parsley.

  5. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.

  6. Add the sliced steak and roasted lemon slices to the salad mixture. Drizzle the dressing over the top and toss gently to combine.

  7. Serve immediately and enjoy!
