Ingredients

  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons capers, drained and chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Trim the cauliflower and cut into florets.

  3. Spread the cauliflower florets on a baking sheet. Drizzle with olive oil and season with salt and pepper.

  4. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and lightly browned.

  5. In a small bowl, whisk together the capers, lemon juice, Dijon mustard, and parsley.

  6. Remove the roasted cauliflower from the oven and transfer to a serving dish. Pour the caper dressing over the cauliflower and toss to coat.

  7. Serve hot and enjoy!
