How To Make Roast Cauliflower with Caper Dressing

Ingredients
- 1 large head of cauliflower
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 tablespoons capers, drained and chopped
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped fresh parsley
Instructions

Preheat the oven to 425°F (220°C).

Trim the cauliflower and cut into florets.

Spread the cauliflower florets on a baking sheet. Drizzle with olive oil and season with salt and pepper.

Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and lightly browned.

In a small bowl, whisk together the capers, lemon juice, Dijon mustard, and parsley.

Remove the roasted cauliflower from the oven and transfer to a serving dish. Pour the caper dressing over the cauliflower and toss to coat.
