Ingredients

  • 2 pounds (900g) potatoes, peeled and cubed
  • 1 cup (240ml) water
  • 1/2 cup (120ml) mayonnaise
  • 2 tablespoons (30ml) Dijon mustard
  • 2 tablespoons (30ml) vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (80g) diced celery
  • 1/4 cup (40g) diced red onion
  • 2 tablespoons (30g) chopped fresh parsley

Instructions

  1. Place the potatoes and water in the pressure cooker.

  2. Close and lock the lid, and cook on high pressure for 5 minutes.

  3. Quick release the pressure, then drain the potatoes.

  4. In a large bowl, mix together the mayonnaise, mustard, vinegar, salt, and black pepper.

  5. Add the cooked potatoes, celery, red onion, and parsley to the bowl and gently toss to combine.

  6. Serve immediately or refrigerate until ready to serve.
