Ingredients

  • 1 whole chicken (about 3-4 pounds)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup chicken broth

Instructions

  1. Rinse the whole chicken under cold water and pat it dry with paper towels.

  2. In a small bowl, mix together salt, paprika, garlic powder, dried thyme, and dried rosemary.

  3. Rub the olive oil all over the chicken, then sprinkle the spice mixture evenly all over the chicken.

  4. Pour the chicken broth into the pressure cooker.

  5. Place the chicken on the trivet or steamer basket inside the pressure cooker, breast-side up.

  6. Close the pressure cooker and set it to high pressure. Cook for 25 minutes per pound of chicken.

  7. Once the cooking time is up, let the pressure release naturally for 10 minutes, then carefully release any remaining pressure.

  8. Use a meat thermometer to check if the chicken is cooked through. The internal temperature should reach 165°F (74°C).

  9. Remove the chicken from the pressure cooker and let it rest for a few minutes before serving.

  10. Carve the chicken into pieces and serve with your favorite sides.
