Ingredients

  • 2 cucumbers, sliced
  • 1 red onion, thinly sliced
  • 4 tomatoes, diced
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large bowl, combine the cucumbers, red onion, and tomatoes.

  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, lemon juice, sugar, salt, and pepper.

  3. Pour the marinade over the vegetables and toss to coat evenly.

  4. Cover and refrigerate for at least 1 hour to allow the flavors to meld.

  5. Remove from the refrigerator, garnish with fresh parsley, and serve chilled.
