Ingredients

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 cup crushed tomatoes
  • 1 cup chicken broth
  • 1/2 cup red wine
  • 2 tbsp tomato paste
  • 2 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Fresh parsley, for garnish

Instructions

  1. Season chicken thighs with salt and pepper.

  2. Heat olive oil in a skillet over medium-high heat. Brown the chicken thighs on both sides.

  3. Transfer chicken thighs to the slow cooker.

  4. In the same skillet, add the onion, garlic, and mushrooms. Sauté until softened.

  5. Add crushed tomatoes, chicken broth, red wine, tomato paste, thyme, rosemary, and bay leaf to the skillet. Stir well to combine.

  6. Pour the sauce mixture over the chicken thighs in the slow cooker.

  7. Cover and cook on low heat for 4 hours, or until chicken is tender and cooked through.

  8. Garnish with fresh parsley before serving.
