  • 4 cups mixed salad greens

  • 1 cup bell pepper, diced
  • ½ cup red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh basil, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and fresh basil.

  2. In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper.

  3. Drizzle the dressing over the salad and toss gently to combine.
