How To Make Chipotle Corn Salad

Ingredients
- 4 ears of corn, grilled and kernels removed
- 1 cup of black beans, rinsed and drained
- 1 cup of cherry tomatoes, halved
- 1/4 cup of red onion, finely chopped
- 1/4 cup of cilantro, chopped
- 1/4 cup of lime juice
- 2 tablespoons of olive oil
- 1 chipotle pepper in adobo sauce, finely chopped
- 2 cloves of garlic, minced
- Salt and pepper to taste
Instructions

In a large bowl, combine the grilled corn kernels, black beans, cherry tomatoes, red onion, and cilantro.

In a separate small bowl, whisk together the lime juice, olive oil, chipotle pepper, garlic, salt, and pepper.

Pour the dressing over the corn mixture and toss until well coated.

Serve immediately or refrigerate for a few hours to allow flavors to meld.
