Ingredients

  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 1 cup kumquats, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup almonds, toasted
  • 2 cups mixed greens
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the shredded chicken, sliced kumquats, red onion, cilantro, almonds, and mixed greens.

  2. In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper.

  3. Pour the dressing over the salad and toss well to combine.

  4. Serve the chicken & kumquat salad chilled and enjoy!
