Ingredients
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1 cup kumquats, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup almonds, toasted
- 2 cups mixed greens
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 tablespoons lemon juice
- Salt and pepper, to taste
Instructions

In a large bowl, combine the shredded chicken, sliced kumquats, red onion, cilantro, almonds, and mixed greens.

In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper.

Pour the dressing over the salad and toss well to combine.

Serve the chicken & kumquat salad chilled and enjoy!
