How To Make Baked Salmon with Potatoes & Fennel

Ingredients
- 4 salmon fillets
- 4 potatoes, peeled and diced
- 1 fennel bulb, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced
Instructions

Preheat the oven to 400°F (200°C).

Place the salmon fillets on a baking sheet lined with parchment paper.

In a large bowl, toss the diced potatoes, sliced fennel, olive oil, salt, and black pepper together until well coated.

Spread the potato-fennel mixture around the salmon fillets on the baking sheet.

Place lemon slices on top of each salmon fillet for added flavor.

Bake in the preheated oven for 30-35 minutes, or until the salmon is cooked through and the potatoes are crispy.
