Ingredients

  • 4 salmon fillets
  • 4 potatoes, peeled and diced
  • 1 fennel bulb, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the salmon fillets on a baking sheet lined with parchment paper.

  3. In a large bowl, toss the diced potatoes, sliced fennel, olive oil, salt, and black pepper together until well coated.

  4. Spread the potato-fennel mixture around the salmon fillets on the baking sheet.

  5. Place lemon slices on top of each salmon fillet for added flavor.

  6. Bake in the preheated oven for 30-35 minutes, or until the salmon is cooked through and the potatoes are crispy.

  7. Serve hot and enjoy!
