How To Make Tortellini Pesto Salad

Ingredients
- 9 oz tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup pine nuts, toasted
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup pesto sauce
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions

Cook the tortellini according to the package instructions. Drain and rinse with cold water to stop the cooking process.

In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, black olives, pine nuts, grated Parmesan cheese, and fresh basil leaves.

In a small bowl, whisk together the pesto sauce and extra virgin olive oil. Season with salt and pepper.

Pour the pesto dressing over the tortellini mixture and toss until well coated.

Serve chilled and enjoy!
