Ingredients

  • 1 lb tortellini
  • 2 cups broccoli florets
  • 1/2 cup homemade pesto
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.

  2. In a pot of boiling water, blanch the broccoli florets for 2 minutes. Drain and set aside.

  3. In a large skillet, heat the pesto over medium heat. Add the cooked tortellini and blanched broccoli. Toss to coat well.

  4. Cook for an additional 2-3 minutes, until the tortellini is heated through.

  5. Serve hot, topped with grated Parmesan cheese.
