How To Make BLT Panzanella

Ingredients

  • 6 slices bacon
  • 4 cups day-old bread, cubed
  • 2 cups cherry tomatoes, halved
  • 4 cups lettuce, torn into bite-sized pieces
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese
  • For the vinaigrette:
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Remove from skillet, crumble, and set aside.

  2. In the same skillet, toast the bread cubes until golden and crispy. Remove from heat and let cool.

  3. In a large bowl, combine the cherry tomatoes, lettuce, red onion, basil, and Parmesan cheese.

  4. In a small bowl, whisk together the red wine vinegar, olive oil, garlic, Dijon mustard, salt, and pepper to make the vinaigrette.

  5. Add the crumbled bacon and toasted bread cubes to the bowl with the salad ingredients.

  6. Drizzle the vinaigrette over the salad and toss until well coated.

  7. Serve immediately and enjoy!
