Ingredients

  • 4 chicken thighs
  • 2 parsnips, peeled and cut into chunks
  • 2 carrots, peeled and cut into chunks
  • 1 sweet potato, peeled and cut into chunks
  • 1 turnip, peeled and cut into chunks
  • 1 onion, peeled and quartered
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large baking dish, toss the parsnips, carrots, sweet potato, turnip, onion, and garlic with olive oil, thyme, rosemary, salt, and pepper.

  3. Push the vegetables to the sides of the dish and place the chicken thighs in the center.

  4. Season the chicken with salt and pepper.

  5. Roast in the preheated oven for 40 minutes, or until the chicken is cooked through and the vegetables are tender.

  6. Serve hot and enjoy!
