How To Make St David’s Day Risotto

Ingredients
- 2 tbsp butter
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 300g Arborio rice
- 125ml white wine
- 1 leek, thinly sliced
- 100g Caerphilly cheese, crumbled
- 100g smoked bacon, cooked and crumbled
- 1 liter vegetable broth
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large pan, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

Add the Arborio rice to the pan and stir well to ensure each grain is coated in the butter. Cook for 1 minute.

Pour in the white wine and cook until it has been absorbed by the rice.

Gradually add the vegetable broth, a ladleful at a time, stirring continuously and allowing the rice to absorb the liquid before adding more.

After adding about half of the broth, stir in the sliced leek and continue adding the remaining broth until the rice is cooked al dente.

Remove from the heat and stir in the crumbled Caerphilly cheese and cooked bacon. Season with salt and pepper to taste.

Let the risotto rest for a few minutes before serving. Garnish with fresh parsley.
