Ingredients

  • 1 cup dried red beans, soaked overnight
  • 4 sausages, sliced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 green bell pepper, diced
  • 2 stalks of celery, sliced
  • 1 bay leaf
  • 1 teaspoon cayenne pepper (optional)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste
  • 4 cups chicken broth

Instructions

  1. Drain and rinse the soaked red beans.

  2. In a pressure cooker, sauté the sausages until browned. Remove and set aside.

  3. In the same pressure cooker, sauté the onion, garlic, bell pepper, and celery until softened.

  4. Add the red beans, bay leaf, cayenne pepper, smoked paprika, dried thyme, salt, pepper, and chicken broth.

  5. Close the pressure cooker and cook on high pressure for 20 minutes.

  6. Release the pressure naturally for 10 minutes, then quick release any remaining pressure.

  7. Open the pressure cooker and stir in the cooked sausages.

  8. Serve hot with rice or crusty bread.
