Ingredients

  • 2 cups dried black beans, rinsed and sorted
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 4 cups vegetable broth or water

Instructions

  1. In the pressure cooker, combine the black beans, onion, garlic, jalapeno pepper, cumin, chili powder, salt, and vegetable broth or water.

  2. Close the pressure cooker lid and set the pressure release valve to the sealing position.

  3. Cook on high pressure for 40 minutes.

  4. Allow the pressure to naturally release for 15 minutes, then carefully do a quick release to release any remaining pressure.

  5. Remove the lid and stir the black beans. Serve hot.
