Ingredients

  • 320g spaghetti
  • 2 lemons, zest and juice
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup pitted green olives, sliced
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant.

  3. Add the sliced olives, lemon zest, and lemon juice to the skillet. Cook for another 2-3 minutes, stirring occasionally.

  4. Add the cooked spaghetti to the skillet and toss until well coated with the lemon and olive mixture.

  5. Season with salt and pepper to taste. Sprinkle with chopped parsley.

  6. Serve hot with grated Parmesan cheese on top.
