Ingredients

  • 8 oz rice noodles
  • 1/2 cup sundried tomatoes, chopped
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.

  3. Add the cooked rice noodles, sundried tomatoes, and Parmesan cheese to the skillet. Toss to combine and heat through.

  4. Remove from heat and stir in the fresh basil leaves. Season with salt and pepper to taste.

  5. Serve hot and garnish with additional Parmesan cheese and basil leaves, if desired.
