Ingredients

  • 8 oz spaghetti
  • 1 onion, thinly sliced
  • 3 cloves of garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/2 tsp red pepper flakes
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large skillet, combine the spaghetti, onion, garlic, cherry tomatoes, red pepper flakes, and vegetable broth.

  2. Bring the mixture to a boil over high heat, then reduce the heat to medium-high. Cook, stirring occasionally, until the pasta is al dente and the liquid has reduced and thickened, about 10-12 minutes.

  3. Season with salt and pepper to taste.

  4. Remove from heat and garnish with fresh basil leaves.

  5. Serve hot, topped with grated Parmesan cheese.
