Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a mixing bowl, combine the flour, eggs, olive oil, and salt. Mix until a dough forms. Knead the dough on a floured surface for about 5 minutes, then cover and let it rest for 20 minutes.

  2. In a separate bowl, mix together the ricotta cheese, mozzarella cheese, Parmesan cheese, feta cheese, black pepper, basil, oregano, garlic powder, and parsley.

  3. Roll out the dough into a thin sheet using a rolling pin or pasta machine. Cut the dough into small squares, about 2 inches by 2 inches.

  4. Spoon about 1 tablespoon of the cheese mixture onto each square. Fold the dough over the filling to create a triangle and press the edges to seal.

  5. Bring a pot of salted water to a boil. Cook the ravioli for about 3-4 minutes, or until they float to the surface. Remove the ravioli from the water using a slotted spoon.

  6. Serve the four cheese ravioli hot, garnished with additional Parmesan cheese and fresh parsley, if desired.
