Ingredients

  • 9 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup frozen spinach, thawed and drained
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the lasagna noodles according to package instructions. Drain and set aside.

  2. Preheat the oven to 375°F (190°C).

  3. In a mixing bowl, combine the cooked chicken, ricotta cheese, mozzarella cheese, Parmesan cheese, spinach, tomatoes, basil, garlic, oregano, salt, and black pepper. Mix well.

  4. In a greased baking dish, spread a thin layer of the chicken mixture. Place 3 lasagna noodles on top. Repeat the layers, finishing with a layer of the chicken mixture on top.

  5. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  6. Remove from the oven and let it rest for a few minutes before serving.
