How To Make Cherry Tomato & Ricotta Cavatappi

Ingredients

  • 8 oz cavatappi pasta
  • 2 tbsp olive oil
  • 1 pint cherry tomatoes, halved
  • 3 cloves of garlic, minced
  • 1/2 tsp red pepper flakes
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the cavatappi pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the cherry tomatoes and garlic, and cook for 5 minutes until the tomatoes start to soften.

  3. Stir in the red pepper flakes and season with salt and pepper.

  4. Add the cooked cavatappi pasta to the skillet and toss to coat it with the tomato mixture.

  5. Remove from heat and stir in the ricotta cheese until well combined.

  6. Sprinkle Parmesan cheese over the top and garnish with fresh basil leaves.

  7. Serve hot and enjoy!
