Ingredients

  • 8 oz bucatini pasta
  • 1 lb Italian sausage, casings removed
  • 8 oz mushrooms, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the bucatini according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up into crumbles with a spoon.

  3. Add the mushrooms, onion, and garlic to the skillet. Cook until the mushrooms are tender and the onion is translucent.

  4. Pour in the chicken broth and simmer for 5 minutes to allow the flavors to meld together.

  5. Add the cooked bucatini to the skillet and toss to coat it evenly with the sauce. Cook for an additional 2-3 minutes until heated through.

  6. Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.

  7. Serve the bucatini with mushrooms and sausage garnished with fresh parsley.
