Ingredients

  • 1 pound ground beef
  • 1/2 cup white rice
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 6 cups beef broth
  • 1 cup diced tomatoes
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large bowl, combine ground beef, white rice, breadcrumbs, egg, cilantro, onion, garlic, cumin, and oregano. Mix well until all ingredients are evenly incorporated.

  2. Roll the mixture into small meatballs, about 1-inch in diameter.

  3. In a large pot, bring beef broth to a boil. Add diced tomatoes, carrots, and potatoes. Season with salt and pepper.

  4. Gently drop the meatballs into the boiling broth. Reduce heat to low and simmer for 20-25 minutes, or until meatballs are cooked through and rice is tender.

  5. Serve hot, garnished with fresh cilantro.
