Ingredients

  • 1 small butternut squash, peeled, deseeded, and cut into cubes
  • 4 cups of sourdough bread, torn into pieces
  • 1/4 cup of fresh sage leaves, roughly chopped
  • 1/2 cup of grated Parmesan cheese
  • 3 cloves of garlic, minced
  • 1/4 cup of olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large baking dish, combine the butternut squash, sourdough bread, sage, Parmesan cheese, and minced garlic.

  3. Drizzle the olive oil over the ingredients and season with salt and black pepper. Toss to combine.

  4. Bake in the preheated oven for 40-45 minutes, or until the squash is tender and the bread is crispy.

  5. Serve hot and enjoy!
