Ingredients

  • 8 oz pasta
  • 2 cups diced butternut squash
  • 1 tbsp olive oil
  • 1 tsp dried sage
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Cook the pasta according to package instructions until al dente. Drain and set aside.

  3. Toss the diced butternut squash with olive oil, dried sage, salt, and pepper. Spread onto a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.

  4. In a large bowl, combine the cooked pasta, roasted squash, ricotta cheese, and half of the Parmesan cheese. Season with salt and pepper to taste.

  5. Transfer the mixture to a baking dish and sprinkle with the remaining Parmesan cheese.

  6. Bake for 15-20 minutes, or until the top is golden and bubbly.

  7. Serve hot and enjoy!
