Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup uncooked white rice
  • 2 cups water
  • 1 can diced tomatoes, undrained
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, cook ground beef, onion, and green pepper over medium-high heat until beef is browned and vegetables are tender.

  3. Add rice, water, diced tomatoes (with their juice), salt, black pepper, and garlic powder to the skillet and stir to combine.

  4. Bring mixture to a boil, then reduce heat, cover, and simmer for 18-20 minutes or until rice is tender.

  5. Transfer mixture to a greased 9×13 inch casserole dish and sprinkle with shredded cheese.

  6. Bake for 15-20 minutes or until cheese is melted and bubbly.
