Ingredients

  • 8 oz spaghetti
  • 2 cups cooked turkey, shredded
  • 1 cup sliced mushrooms
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook spaghetti according to package instructions. Drain and set aside.

  2. In a large skillet, melt butter over medium heat. Add onions, bell peppers, mushrooms, and garlic. Cook until vegetables are tender.

  3. Sprinkle flour over the vegetables and stir well. Cook for 1-2 minutes to remove the raw flour taste.

  4. Slowly whisk in chicken broth and milk. Bring to a simmer and cook until the sauce thickens.

  5. Stir in shredded cheddar cheese and Parmesan cheese until melted and smooth.

  6. Add cooked turkey, dried thyme, dried oregano, salt, and pepper to taste. Stir to combine.

  7. Add cooked spaghetti to the skillet and toss until well coated with the sauce.

  8. Serve hot, garnished with fresh parsley.
